SOURCING
The Huila region of Colombia is renowned for its quality coffees, which are often sold in combined lots from multiple small farms to create regional profiles. However, on occasion we are lucky enough to work with partners who produce single-estate lots, such as this mixed varietal lot from Villa Diana.
This is our first year working with Didier and Leidy Diana, co-operators of Villa Diana – named after Didier’s wife, Diana. We were introduced to their 25 hectare farm and coffee from our partners at Azahar Coffee. In addition to being deeply passionate about producing quality coffee, they are also extremely progressive in their practices – with exceptionally well taken care of fermentation tanks, and near self-sufficiency by way of solar power.
To create this mixed variety lot, the cherries were picked at peak ripeness and floated to further remove defects. After depulping, they were held in cherry for 12 hours, before a 24 hour dry fermentation, washing and further drying on raised beds for 25 days.

Colombia is a country of mixed terrains, with tropical climates on the border of the Amazon to the east, and sandy, coastal regions to the west. However, throughout the centre of the country, there are rolling hills with rich soil and a range of microclimates – perfect conditions for creating excellent coffee.
Huila is one of the most well known coffee-producing regions in Colombia, and for good reason. The temperature there is perfect for coffee growing, and has perfect soil and the exact right amount of rainfall. It’s Denomination of Origin status recognises coffees from Huila as having a delicate profile, bright acidity, medium body, sweet notes, and a fruity, caramel aroma.
Huila is dominated by small producers, with the average farm size just 1.5 hectares.With around 154,800 hectares of coffee farms, you can expect to find a lot of varieties in Colombia, such as Caturra, Typica, Castillo, Bourbon, Colombia, Maragogype, Tabi, and even Geisha. This particular lot is a ‘CCC’ lot, comprised of Colombia, Caturra and Castillo varieties.
