The second lot from the Aguthi Co-op that we are featuring this month is a CM Selection 'Diamond' profile - 'Diamond' refers to the brightness and clarity of the flavour in this coffee.

This coffee was fermented for a few days as whole cherries in tanks which were flushed with carbon dioxide. After this, they were removed from the tanks, washed, pulped and dried slowly on African beds. The magic which produces the distinct flavours in this coffee happens in the initial whole cherry fermentation. The naturally high glutamic acidity present in Kenyan coffees reacts to CM processing and is what makes this coffee so creamy whilst retaining classic washed Kenyan traits. This adds texture and structure, making it perfect as an incredible espresso.
